This bundle brings together our full Single Source Surplus Series—each sauce made from the excess harvest of a single local farm, fermented and layered with handcrafted vinegars to capture a moment in the season. No two are alike. Each bottle tells the story of the land, the farm, and the ingredients that came together that year.

These sauces are built through long ferments and bright, expressive vinegars—pushing into what we think of as a “triply fermented” profile. The result is depth, balance, and versatility. Some lean bright and tangy, others rich and savory, but all are designed to be used as flavor tools in your kitchen.

• Strawberry Dog Farm (Beverly, MA) – A bright verde-style sauce with jalapeños, poblanos, and Sungold tomato vinegar. Fresh, tangy, lightly sweet.
• Skinny Dip Farm (Westport, MA) – Citrus-forward aji peppers with black garlic and husk cherry vinegar. Floral, bold, and built for cooking.
• Farmer Dave’s (Dracut, MA) – Cherry bomb and aji dulce peppers with pear, apple, and husk cherry vinegar. Balanced, savory, and tangy.
• Hutchins Farm (Concord, MA) – Pepper-forward and floral with radish, squash, and clean apple cider vinegar. Complex and versatile.
• Clark Farm (Carlisle, MA) – Tomato, jalapeño, and hot wax peppers with a spicy tomato vinegar and beet sweetness. Deep, layered, and bold.

Why It Matters
At the end of each growing season, farms are often left with surplus produce. Instead of letting it go to waste, we partner with them to ferment and transform that harvest into something lasting. The finished sauce goes back to the farm—and we share it with you.
